Uetorafugu Sashimi carefully cured by a determined and skillful chef

Leaving blowfish to cure for a day or two enhances its taste, and the chef adjusts the curing period for each fish individually. Extending and preserving their tradition, the chef dips and broils the eel for kabayaki dishes in the same secret sauce used since the founding of the restaurant. In choosing his eel, he begins with product from Kagoshima. However, he is not particular about choosing eel from any one place, and instead is particular about purchasing the best available at that time. The chef is also selective about the plates he uses to serve his food. Other than Kyoto's Kiyomizu pottery and Okayama Prefecture's Bizen pottery, Saga Prefecture's Imari porcelain and a line-up of other famous vessels are used to further adorn the foods served. This will allow you to appreciate the appearance of your food as well. There are also sea eel and soft-shelled turtle course meals available with reservation. You can enjoy adding items to your course meal such as sea eel which is not frozen but instead purchased live and served fresh, as well as "foie gras" a side dish popular with our female clients.
