Chef Morimoto was born in Furano in 1942. From the front of Furano Station, he has had a front row seat for seeing the city change over the years. When he was young, he went to Honshu with the desire to become a painter, but returned to Hokkaido when his father fell ill, and has since taken root in Furano. Mr. Morimoto has formed deep friendships with the casts of dramas that have been filmed on location in Furano, and you can feel that in every part of his restaurant. He has a concept of “Furano cuisine” that is focused on Furano produce. He continues to seek out new food by going on eating tours all over Japan and overseas.
