Many ingredients in Shimane are not yet well-known in the rest of the country. Our goal is to demonstrate the delicious taste of these ingredients. A product of Shimane Prefecture, Fukawa Herb Chicken, is made using the best possible seasonings and ingredients. At our restaurant we use many of the local ingredients from the San-in region. Our recommendation is the thickly-sliced ginger pork; it is prepared with thick slices in a way you cannot find anywhere else, you can eat this ginger pork to your heart's content. A mother cooks with thoughts of her children, and so everyone remembers their mother's food as tasting good. Likewise, I think that more than technique, the most important thing is to think of my guests. One of the house's specialities is a plentiful variety of alcoholic beverages, focused on locally brewed sake. We stock everything from well-known brands to rare and unusual items, so that you can enjoy matching them with the cuisine of the San-in region.
