Our Uzuki Course is for visitors in Tokyo who want to experience the full range of yakitori (skewered chicken) flavor and is a product of our patient and exacting preparation

Our Chef Onuma is single-minded in his pursuit of original flavor. The tare (sauce) he uses in creating yakitori takes a very long time to prepare and achieves its unique depth of flavor through very gradual additions of ingredients. The flavor profile and umami (pleasant savory taste) notes change and evolve over the months and years, providing our discerning customers with a complex experience. The yakitori salt he uses is actually a medley of several salts, spices, and ingredients, their flavor painstakingly boiled down & condensed. Our chicken meat for our torisashi (raw chicken) sashimi is sliced the morning it's served and has just the right texture and mature umami flavor when we prepare it for our customers. The methods we use to slice the chicken change depending on the cut of meat, always resulting in a delicious product. This is a gem of a dish that pairs splendidly with a cup of sake.
