The lamb is sliced thinly in this dish so that it's easy to eat and doesn't have too much of a mutton smell. It's highly recommended, because the chef read mores know the ingredients inside and out and prepare the dish painstakingly so that all flavors are preserved. We are very selective about freshness here, and use fresh fish from the very same day. We decide how to cook each dish only after examining each ingredient we have in stock..
