With our French chef's knowlegde of Japanese ingredients, and the natural elements in our interiors, you are sure to enjoy our warm and diverse service that is part of our ethos.

Smoked salmon is marinated in yuzu-kosho (citrus, salt and pepper). Yuzu (citrus) juice is also added to a yogurt sauce seasoned with mustard to infuse the dish with yuzu flavor. Accompanied by two types of beets, this dish also looks beautiful. Chef Guillaume Bracaval makes full use of Japanese ingredients like yuzu kosho, which he learned to use while still in France. The chef's curiosity and creativity give his dishes flavor. For example, he actively incorporates ingredients he finds when he travels, like wood sorrel from Yakushima. Despite being a grande maison, the service is very homey, as if you'd been invited over to someone's house. In that, they have the same approach as Maison Troisgros. For celebrations, anniversaries, receptions, and more, they promise to help you have a wonderful time in keeping with the occasion. The interior features natural materials like wood, stone, glass, earth, and more, giving it an atmosphere where a touch of nostalgia lingers inside the modernism.
