A traditional home cuisine that our unique interpretation takes to another level. Why not plan a business meeting or special occasion here?

Put Wagyu (Japanese beef) broth gelee at the bottom of the glass first, then layer onion mousse and wagyu rillettes. Beets in espuma form are placed on top. Each of the elements are from borscht. We reconstruct borscht with each element in a unique dish. Goat meat carpaccio. I'm familiar with goat meat because it is very famous in my home town of Kikaijima. The smell of the meat can be eased with rocket leaf and deep-fried artichoke, which are known for having a slightly bitter taste. Enjoy this dish with mugwort sauce. Chef Yoshino says: "We think about the customer first while we are cooking, so every step of our cooking style is logical and very simple." The customer can feel terroir from all the dishes that intuitively impress them.
