Vegetarian friendly Japanese soba restuarant with the best seasonal ingredients

The soba (buckwheat) flour I use is really sensitive to factors such as humidity, so I make my noodles by hand everyday. This allows me to take into account subtle elements such as the amount of moisture in the flour, and adapt to make sure my noodles always have the same exquisite taste. My "Seasonal Eight Dish Assortment" uses the very best ingredients. I give a special attention to my mizugashi (jelly desserts), asking the opinion of experts from different places, and arranging them in pleasant dishes. I want to please my customers through the unique taste and look of the dishes I serve. Our restaurant is a healing place both for mind and body.
