Enjoy a fun dining experience with fresh seafood from Hidaka and other locally sourced ingredients.

Our sashimi platter of freshly butchered Hidaka seafood makes no compromises when it comes to freshness. Furthermore, we have a strong preference for ingredients sourced in Hidaka, such as the Hidaka kombu (kelp) and fresh seafood from Maehama, including Matsukawa flounder and whelk. The flavors of these ingredients are further enhanced by removing the nerves with an air compressor before allowing them to age. In addition to our seafood, our aged Yezo sika (deer) has a signature flavor and aroma, and its flavors are further enhanced by the acidity of tomato soup and our homemade dipping sauce. When it comes to hospitality, our staff works together as one to provide each and every customer with an experience that is unique to Oryori Amaya. We are constantly seeking to find new ways to make the time spent at Oryori Amaya as enjoyable as possible with fun times, relaxing spaces, and surprising moments.
