Select Yonezawa Beef Sirloin cooked with meticulous care and served with seasonal vegetables

We are always very careful about the degree to which we cook our beef. Preparing it precisely according to the guest's wishes requires exacting care. Our beef is served with a crispness on the upper and bottom surfaces. Although rare but heated enough inside, it is still thoroughly cooked. We always try to serve with seasonal vegetables to show the season. Some vegetables come from Kyoto, in order to add a hint of the current season to each plate. When cooking in silence, we tend to have a fearsome expression on our face, so we always try to wear a smile when cooking. If the cook can first create a congenial atmosphere with a happy expression, enjoyment of the food follows.
