The best flavors of the season made behind-the-scenes with care. Japanese-style cuisine that is the pride of the ancient city of Kanazawa.

Well-known, traditional Japanese restaurant “Kofuku Yokoyama” hung its noren curtains in the middle of Kanazawa’s Katamachi area after many years of skill-polishing experience in local Kanazawa and Kyoto traditional restaurants. Based on a central concept of “preserving the flavors of the ingredients while not straying from dashi (Japanese broth), which is the base of Japanese cuisine” this restaurant’s menu offers a single meal selected by the chef. Based on daily changing supplies, on any given day only the ingredients which have won the favor of the chef grace the dining table. Going even further, Mr. Yokoyama’s true talent lies not just in displaying the high caliber of his ingredients, but in drawing out their rich and nourishing qualities. Even just a simple nuta (a dish of fish and raw vegetables seasoned in vinegar) is flavored with Tosa vinegar gelee made of rice vinegar mellowed for three months then kneaded into Kyoto white miso (fermented soybean paste) for a full two hours, after which it is seasoned with lemon and Japanese mustard. It’s these behind-the-scenes efforts that underlay such first-rate flavors.
