From the chef
Japanese cuisine extraordinaire, pursuing another approach to sushi while respecting the Edomae tradition.
He was born in 1978 in Saitama prefecture. His interest for cooking grew since his junior high school, when he had a chance to help prepare meals for the family. He began his training as a chef at the renowned Zorokuzushi in Roppongi when he was 18. He learned the basics of preparing seafoods and Edomae sushi and continued improving his skills at the place. He became the leading chef at yon in 2016. Since then, he expresses his skills in a refreshing space that fuses sushi and bar style. His skillfull preparing of dishes, novel arrangements and personable characater has earned him reputation. He's capable of showing his knack of creating an elbow room in a high-class environment.
