Located in the mountain village of Oku Takao, this renowned kaiseki cuisine restaurant uses high-quality seasonal ingredients to make every dish.

Their dashi, the broth that creates the famous umami (Japanese savory taste) flavor, is prepared every day from katsuobushi (dried tuna flakes), neatly shaved from skipjack tuna produced in Makurazaki in Kagoshima Prefecture. When the dashi is combined with stock from seasonal ingredients such as conger eel and horsehair crab, it results in a delicious soup with layered and rich flavors that truly evoke the season.
