Mr. Kanazawa opened a sake bar to introduce the delicious taste of Japan to overseas guests.

He was born in 1980 in Osaka. While working for a trading company, he had the opportunity to visit many different countries. As he tasted the cuisine of those countries and met the people there, his fascination for Japanese cuisine, which is his origin, grew. So he took a new step forward by entering the culinary world, a field he had been interested in since his student days. He studied independently and honed his culinary skills under the guidance of his acquaintance, the current head chef, and opened SAKE BAR CHOCO CHOCO as the owner in 2024.

He was born in 1992 in Kanagawa. As a child, he became interested in the culinary world by occasionally cooking dinner to help his busy mother. Deciding to pursue a career in the culinary world, he entered a high school where he could obtain a cooking license. Studying all the basics of Japanese, Western, and Chinese cuisine, he graduated from the school and joined a company that operates Italian restaurants. For 13 years, he honed his skills in Italian cuisine and worked as a head chef. In April 2023, he moved to his current company by chance. In May, he became the manager and head chef of Robata to Oden Kyosuke Shinbashi Branch.

He was born in 1973. A part-time job at an izakaya (Japanese pub) led him to become a chef. He honed his skills at various eateries across Tokyo, including Italian restaurants and cafes. Through hard work and dedication, he became a chef and manager of the restaurants. Currently, he is the head chef and manager of Hakuso USHIBIYORI. Spends his days refining recipes to ensure his guests enjoy delicious meat dishes. He also focuses on creating a comfortable atmosphere in the restaurant.

Mr. Minoura has been very interested in cooking ever since he was a child.

Mr. Minoura was born in 1985 in Gifu. Having been very interested in cuisine since he was a child, from the age of 16, he began walking the path of cooking. After honing his cooking skills for 6 years at a famous Japanese inn in Gifu, he served as head chef at a long-standing Japanese restaurant in Shimbashi called Ikkoku. He was then selected to be the head chef at -shikinouta-, where he works even now. He works tirelessly every day to deliver delicious food and smiles to his customers.

At KayaGroup, he studied under legendary Japanese chef Mr. Kazuyoshi Masaki and inherited the "Masaki-ryu" cooking style. Mr. Furumoto was inspired by a cooking TV program and became a cook as a profession that requires delicate work.

Mr. Furumoto was born in 1989 in Kyoto. Since childhood, he has enjoyed delicate tasks. While in university, he was moved by a cooking program he saw on TV and decided to become a cook because that would suit what he wanted to do. After graduation, he started his apprenticeship as a cook at Izakaya Asahi, run by his friend's relative. He learned how to choose fresh ingredients and use them in cooking. In addition to the classic Izakaya menus, he puts a lot of effort into selecting alcoholic drinks that go well with seafood dishes.

He was born in 1981 in Tottori. After graduating from high school, he studied the basics of cooking at a culinary school before joining a Chinese restaurant in Kobe. After honing his skills in the Chinese kitchen, he returned to his hometown, Tottori, to gain further experience at various dining establishments. He joined "Kimiomou Tsubame no Kurashi" as a chef and manager, later taking on the role of owner in the fall of 2019. At the restaurant, named after the swallow, a bird of good fortune that brings happiness, which celebrates its seventh anniversary in February 2023, he brings happiness to people through his creative cuisine.

After 6 years as a repeat customer, he became a pupil of the owner, Mr. Zenkei Nobeta, a leading expert of shellfish cuisine. Acquiring the in-depth skill and the knowledge of shellfish cooking in 3 years, he became the chef of the new restaurant [Akoya] at the end of 2013. His outstanding skill catapulted the restaurant to the top.
