1. Oryori Kifune

Restaurant owner Kiyokazu Nakagawa chuckles as he characterizes the distinctive quality of his food as "lack of coherence." This shows that he is constantly on the lookout for quality components, which he seizes with enthusiasm. 2. Ajiraku Yumeri

A well-known restaurant uses contacts from home to source fresh local seafood and Okunoto sake.

Making the most of the fact that it was founded in the Ushitsu district of Noto, "Ajiraku Yumeri" gets its seafood in a unique way. The goal while opening this restaurant was to serve the tastiest, freshest meals possible. Every day, the "Sashimi Platter" is glittering and seductive, filled with fish caught that day from Noto, including rockfish, flounder, whale, tilefish, Japanese amberjack, whelks, and mackerel. The fish are delivered to the restaurant in time for service that day and are quickly cooked after being auctioned off at Ushitsu Fishing Harbor every morning at seven. Local sake obtained from five distilleries is offered with the seafood.

3. Hibi Sakanazuki Toboku

Owner of "Hibi Sakanazuki Toboku," Mr. Hiroshi Toki declares, "Instead of tuna or salted salmon roe that you can get anywhere, I want to offer up seafood that you can only taste in my hometown of Kanazawa." The phrase "Hibi Sakanazuki" (loving fish every day) was inspired by the owner's realization, upon returning to his birthplace of Kanazawa after working in Kyoto and Tokyo, of the simplicity and universal delectability of fish. The best venue to have authentic Kanazawa-style fish with sake (a Japanese alcoholic beverage) is here. There isn't a great selection of meals because it is a small restaurant, but all beverages and cuisine are prepared with love and attention.

4. Shunsai Washoku Koufuku

Shunsai Washoku Koufuku, which is situated in Omi Market, the center of Kanazawa, serves up seasonal dishes at affordable prices. The restaurant is spacious, and you may eat in a tatami room or at a table with ease. 5. Bistro' Kamiya-Ichibei

Bistro’ Kamiya Ichibei, which offers seasonal dishes, is located at a 130-year-old Kanazawa Machiya, standing by the Saigawa River. There are many options, ranging from a la carte meals that highlight the wealth of Hokuriku, including "Kani-Men Oden," prepared with a whole Kabako crab, and "Specialty Thick Fried Tofu," produced from Toyama's Enrei soybeans, to pasta and char-grilled beef steak. For banquets, there are three different types of course meals that cost between 2,500 and 6,000 yen. Along with a wide selection of food-pairing alcoholic beverages, the restaurant serves Ishikawa-brewed sake like "Kagatobi" and "Tedorigawa," as well as shochu, wine, and cocktails.

6. Kassendokoro taishu sakaba Shintaro
