The Sushiya Shinkichi is located on the 6th floor of a building in front of Shimbashi Station. 24. Sushidokoro Tsunoda (Ningyo-cho)
This is a restaurant in Ningyo-cho, which flourished as a commerical area during the Edo period (1603 - 1867) and still retains that era's traditions and atmosphere to this day. The sushi served here is Edomae-zushi, made with the highest quality and freshest ingredients chosen by the head chef at Tsukiji Market every day. The ingredients are outstanding as they are, but are made even more flavorful by the efforts of the chef. One recommendation is the [Tokusen Nigiri], which is an assortment of nigiri-zushi that is perfect for savoring the flavors realized by Edomae-zushi cooking techniques. This is a restaurant where one can enjoy authentic Edomae-zushi courses. The types of sushi made with the delicate skills of the veteran chefs change depending on the season. Some examples of their offerings include the [Shime Kohada], which is an Edomae-zushi standard of mid-sized spotted sardine marinated in vinegar, and [Yuagari Kuruma-ebi] - a flavorful nigiri-zushi of boiled Japanese tiger prawn and its intestines. Despite being committed to Edomae-zushi*, this restaurant also serves playful side dishes that incorporate French and Italian techniques. The menu consists of courses that center around nigiri-zushi (hand formed sushi), and is based on the tenant of Edomae-zushi where "the finest ingredients are marinated in salt and vinegar and left to ferment". The gari (ginger pickled in a sweet vinegar), served as a palette cleanser, is cut into cubes here rather than the standard thin slices. It is made carefully by hand with organic ginger, and is so good that it can be enjoyed as a dish in its own right.
*A type of sushi that originated from Edo (old name for Tokyo) and traditionally was made with fish from Tokyo Bay (previously called Edo Bay). The ingredients are often prepared by marinating in vinegar, salt, or soy sauce, and the rice tends to have a lighter flavor than the sushi in the Kansai region. The fish used in Edomae-zushi also tends to be slightly different from the fish used in Kansai sushi.

This popular restaurant opened in Shinjuku, an area long considered difficult to operate a good sushi restaurant at, in 2012. The sushi here is made in the style of the famous Tokyo sushi restaurant, Sushi Sho, which consists of serving bite-sized sushi and a la carte dishes alternately. This style was developed to allow customers to take their time and enjoy their meals together with sake. The ingredients of the nigiri-zushi change by the season, but one example is the trout, whose flavor has been enhanced by searing. The [Bara Chirashi] (a bowl with sushi toppings served on vinegared rice), of which there are only 10 bowls available each weekday at lunchtime, is another popular menu item with many fans.

Having opened in 1923, this restaurant has been preserving the tradition of Edomae-zushi for almost 100 years. The sushi is prepared with traditional Edomae methods, resulting in dishes where the natural flavors of the ingredients shine through. Examples of this include clams and conger eel that are simmered until soft and shrimp with oboro* sandwiched inside. The rice is flavored just with white and red vinegar and salt, enhancing the natural sweetness of the rice. This is a special restaurant where one can try luxurious Edomae-zushi that very few chefs can prepare, such as the [Teami-maki] - mid-sized spotted sardine marinated in vinegar and shrimp cooked in a sauce layered alternately.

This is a restaurant that is highly rated by many food aficionados. Within its calm and comfortable atmosphere, why not enjoy a variety of Edomae-zushi made without cutting any corners? The available ingredients change by the season, but the [Hon-Maguro From Kishu Katsuura] is one particular recommendation.
