- A5 Hida beef, slowly simmered in bolognaise sauce and potato pizza
- A5 Hida beef slowly simmered in demi-glace and tomato sauce until the meat is tender.
I added some herbs (oregano and bay leaf) which brings the pizza together nicely.

- Grilled hairtail wrapped in pate brick with green mustard sauce
- Sautéed hairtail fish is wrapped together with rape blossoms and garlic butter in a pâté biscuit (similar to a spring roll wrapper 😘) and slowly baked in the oven.
The moderately fatty hairtail, the slightly bitter rape blossoms, the richness of the garlic butter, and the mellow acidity of the green mustard go well together! Enjoy the crispy texture of the pate brick!
