Fresh Japanese spiny lobster swimming in the fish tank is carefully selected and steamed on the iron plate with herbs. The plump flesh, which keeps its rare texture, is finished by removing the skin to make it easier to eat. The head of the lobster is served as miso soup with rice. *Reservations required at least 3 days in advance.

[Fujin Course] Teppan-steamed King Crab and Seasonal Vegetables with Mustard Sauce - are slowly steamed on the iron plate.

A single large leg of Russian king crab is served. It is steamed slowly on the iron plate with a salt pile and bamboo grass to make it plump and tender. The exquisite cooking brings out the natural sweetness of the crab. *A dish from the Fujin Course.

Fresh live abalones from the Goto Islands and other regions are grilled with kelp and salt. It is a blissful dish with a delicate texture that a knife can easily go into, combined with a clam-based sauce. *Abalone and Prawn are served from May to July due to a Japanese spiny lobster fishing ban. *Reservations required at least 3 days in advance.
