Higashiazabu Ito's fusion style respects Japanese cuisine's seasonality while going beyond its boundaries. The owner-chef, Mr. Ito, skillfully reimagines and presents Japanese traditional ingredients and techniques with thoughtful innovation. Under the concept of "creating a different essence," this restaurant has two rules based on Japanese cuisine. The first rule is the inclusion of kombu (kelp) in every dish. The first is the use of kombu (kelp) in all dishes. Kombu, a unique Japanese ingredient, appears in various forms, such as dashi broth, powder, kombu-jime (marinated in kombu), or jelly. The second is to include seasonal ingredients in all dishes. The main ingredients sourced from the specific region on each dish give a sense of the season.
