Mr. Saito set off on the path of cuisine after experiencing the incredible seafood of his hometown.
Mr. Saito was born in 1997 in Ishikawa. Growing up surrounded by the abundant seafood of his hometown, Kanazawa, he developed a strong desire to work with ingredients that take advantage of their natural appeal. After high school, he spent about nine years at a sushi restaurant in Kanazawa, working hard on his skills in nigiri, fish preparation, building a solid foundation in customer service and as a sushi chef. As his appreciation for the depth of sushi grew, so did his curiosity about cuisine in general, making him want to explore a more diverse world of cuisine. He currently works at Sushi Minatozaki, where he continues to take on new challenges every day.
