Where a scientific perspective and a chef's intuition intersect.
Born in Chiba Prefecture in 1975. During his university years, he developed an interest in cooking through part-time work at a restaurant, while also obtaining a science teaching license with an eye on his future. However, at the age of 24, he pursued a career as a chef, gaining seven years of experience at an Italian restaurant and six years at an okonomiyaki restaurant. He explored cooking from a scientific perspective and even obtained a hunting license. Afterward, he self-taught himself Italian izakayas, Japanese izakayas, and meat bars, before opening "Nikko Sakaba Rairai" in April 2026.
