This is a popular set meal comprising of maki shrimp, whiting, shiso maki squid, three types of vegetable (pumpkin, eggplant, Moroccan beans), and mixed fried shrimp. Other than this, we also have two other set meals, called "Usui Touge" and "Karuizawa." We use ingredients that are in season, changing them depending on the time of year. That is something that we are very particular about with our tempura. The fish are delivered directly from Tsukiji fish market and are incredibly fresh. When we cook, we always make sure to concentrate on what we are doing. Adjusting the temperature of the oil is one of the difficulties of fried food. The adjustment of the heat that is necessary for this delicate style of cooking depends upon the craftsman's concentration. That is the kind of cooking that we produce every day. We have seats at the counter so people should feel free to drop into our restaurant on their own. They can watch us cooking in front of them, as well as being able to enjoy the wonderful smell of the tempura as it is fried.
