This chawanmushi is made with ingredients from Hokkaido that you won't find anywhere else. All of the ingredients are from Hokkaido, including shiitake mushrooms grown over two years on logs, red king crab and surf clams caught in the waters off Hokkaido, Inca no mezame (a type of simmered squid) that have been aged for over a year, and Miyako pumpkin from Ohama, Sapporo.
