A la vapeur means "steamed." Kinmedai (red bream) is steamed rapidly at 120°C/250°F, preserving its savoury flavor and giving it a nice plumpness. A wonderful combination with soup made from a bouillon base and the essence exuded from oysters, mussels and orient clams. They grow their own herbs and purchase only the freshest, best-tasting vegetables available. Limiting their use of animal fats like cream and butter, they strive to bring out the natural taste of the ingredients as much as possible. This restaurant has its own style of hospitality. Counter seating, which is rare in French restaurants, has been adopted because it allows customers to freely talk to the staff, and it makes it easier for the staff to provide customers with the best service possible.
