[Sushi Ichi] specialty "conger eel snack" that uses domestic conger eel.

Carefully selected, steamed, and grilled conger eel. It is made by applying Sushi Ichi's secret sauce to steamed conger eel before having them grilled. With this dish, you can taste a luxurious domestic conger eel dish that draws out the domestic conger eel's delicious flavors without destroying its inherent taste.

Assorted top-quality nigiri (sushi formed by hand)

A luxurious assortment of nigiri made from the finest domestic ingredients and where you can taste the combination of locally-sourced sushi rice and fresh toppings made of Himeji specialties caught in the Seto Inland Sea such as sea bream, conger eel, octopus, squid caught in neighboring waters, tuna, and sea urchin.

Conger eel sushi made with rare domestic conger eel that has been steamed

Although grilled conger eel is the norm in Himeji, [Sushi Ichi] has it steamed. You can enjoy the delicious taste of the conger eel together with sushi rice. Prior to eating, it is brushed with "nikome," a sweet and savory sauce of conger eel broth that has been strained; seasoned with soy sauce, sweet sake, and sugar; and boiled down.

Assorted premium nigiri

This luxurious nigiri platter is made with carefully selected domestic ingredients and includes Himeji specialties caught in the Seto Inland Sea, wild sea bream, conger eel, octopus, squid caught in nearby waters, tuna, sea urchin, and other fresh ingredients of the day, all served with rice made from local rice.

"Anago Sushi" is a sushi made from steamed conger eel, a rare domestic conger eel.

In Himeji, grilled conger eel is the norm, but at Sushiichi, they serve steamed conger eel. You can enjoy the deliciousness of the conger eel together with the rice. The broth from the conger eel is strained and seasoned with soy sauce, mirin, sugar, and other ingredients to create a sweet and spicy flavor. The broth is then reduced and spread on the sushi.

"Anago Box Sushi" is a box sushi dish with a luxurious presentation of domestic conger eel.

"Anago Box Sushi" is served with a hearty serving of rice and a special soy sauce. It is made with fresh anago, bringing out the original flavor of the ingredients, resulting in a refined taste.
