The ingredients for this dish are lovingly selected from kohada that have come from Amakusa, by way of Tsukiji. They are prepared at the restaurant, thoroughly immersed in salt and vinegar to further bring out their wonderful flavor, then cooked in sake for an even more complex flavor that spreads throughout the mouth.

Relatively large kuruma shrimp are cut in half, keeping their tender texture intact. This restaurant's famous topping: [Kuruma Shrimp]

That faint warmth you sense when you're eating is because the shrimp were swimming around right up until you made your order. The flavor, that is further enhanced by the warmth, is irresistibly delicious.

The shiny appearance is beautiful, befitting the shiny ingredients. The gizzard shad is seasoned with just the right amount of salt and vinegar.

This dish is made with great care from the ingredients, using gizzard shad delivered from Amakusa via Tsukiji. The fish is filleted in the store and thoroughly marinated in salt and vinegar to enhance its flavor. It is covered in nigiri sauce, which gives it a complex flavor that goes beyond just the taste of vinegar.

The reason it's slightly warm when you eat it is because it's boiled after the order is placed and has been swimming until just before it's served. The flavor and umami that comes out as it's warm is irresistibly delicious.
