The quality of ingredients is very important; for eels, they choose the ones with soft skin and abundant fat without clinging to where it is produced. For wagyu beef, they use A5 grade only, and for seafood, they carefully select those produced from all over Japan. Their Japanese cuisine prepared with seasonal ingredients is comforting. Their skillfully-grilled savory eel dishes have crispy skin outside and fluffy and juicy inside. Served with generous amounts of the special sauce prepared with high-grade Aichi produced tamari soy sauce with sugar and mirin.
