It's three kinds of appetizers served in the course. The contents vary occasionally, but the consistently available rare shark heart is exquisite. It closely resembles the taste and texture of raw liver sashimi, with absolutely no fishy odor and a fresh flavor. Enjoy it with a touch of sesame oil.

The house-made ikura (samon roe) prepared in a dashi broth offers a unique flavor that differs from the typical soy-sauce marinated ikura.
