They serve A4-rank Hiroshima Beefsteak. A5-rank is often considered as the highest rank of Japanese beef; however, A5 contains more fat than A4. The owner recommends A4-rank Hiroshima beef, as it has a right balance of red meat and fat. In addition to their fun arrangement of grilling ingredients in a dynamic way on a polished iron plate in front of the guests, the sounds of the cooking and the aroma also stimulate your five senses. They do their best to use 100% local ingredients from Hiroshima prefecture, such as Hiroshima Beef, and oyster and octopus caught in the Seto Inland Sea. Their local ingredients from Hiroshima also include fresh vegetables from Kumano-cho, which is the owner's hometown, as well as soy sauce, wasabi, and seaweed salt. They also use rare ingredients such as abalone from the nearby seas around Kurahashi and Etajima.
