An Edomae sushi chef who approaches ingredients with sincerity and consistently brings out their full flavor.
Mr. Onami was born in Monzen-Nakacho, Tokyo, with approximately 40 years of culinary experience. Having been immersed in sushi culture since childhood, he chose the culinary path as a "journey he wishes to master for the rest of his life." He honed his skills at long-established sushi restaurants and other Japanese cuisine establishments, gaining experience as a head chef. His philosophy is "to bring out the best in the ingredients." He pursues the perfect piece of sushi that brings out the inherent flavor of the ingredients, and continues to hone his skills with the belief that "there is no end to the path of cooking." His favorite phrase is "the ultimate piece of sushi." Currently serving as Executive Chef at FUJIYAMA, he remains on site, dedicated to sharing sushi culture with the world.
