Mr. Matsuoka embodies the essence of Japanese cuisine, shaped by the spirit of the tea ceremony and refined through relentless practice.

He was born in 1985 in Saitama. He is a father of three. Beginning part-time work at a local sushi restaurant at age 15 inspired him to pursue Japanese cuisine, refining his skills in sushi, kappo (traditional Japanese cooking), and kaiseki (tea ceremony dishes). After gaining valuable experience at renowned restaurants like "Sushi Ninomiya" in Urawa, he became the owner of "Sakana Motoshi" in 2019. During the COVID-19 lockdown, he seized the opportunity to study diligently and earned his sommelier certification. He also practices the tea ceremony and offers cuisine inspired by the traditions of kaiseki cuisine.
