A sushi chef who listens to the ingredients' voices and elevates them through creative ingenuity.

Mr. Kadono was born in 1977 in Fukui. He started working in sushi and kaiseki cuisine at 15, and has been a chef ever since. His experience in assisting his family with a Chinese restaurant laid the groundwork for creating housemade seasonings and developing his distinct flavors. His philosophy is "to serve delicious food in the best possible form". His approach involves using premium ingredients and unique techniques that are specific to his restaurant. The relaxed atmosphere inside is another defining feature; he strives to ensure that guests can enjoy sushi in a warm and welcoming environment.
