From the chef

Devoted to the path of cuisine. Mr. Mori shares the new charms of wine and Italiian cuisine in Minami, Osaka.

Mr. Mori was born in Osaka Prefecture in 1985. He is the owner and sommelier of Osteria Pantera. As the third head of the long-established Moriyoshi noodle company in Tsurumi, Osaka, he grew up having a close relationship with food. As an adult, he worked in the family noodle business while trying food all across Japan, and he was captivated by wine. At the age of 31, he became president of Moriyoshi. He refined his expertise in noodles and went into the restaurant industry, founding his current restaurant in October 2025. His innovative, wine-focused Italian cuisine has brought fresh styles to Osaka's Minami dining scene.
