Mr. Ichikawa shows the richness and appeal of Japanese food with authentic Edomae sushi.
After training at famous restaurants in Tokyo and serving as head chef and general manager, Mr. Ichikawa opened his own restaurants in Ginza/Nihonbashi. His restaurants earned a 4.82 rating on the Japanese reservation site Ikyu.com and was ranked number 1 for customer reviews in the Nihonbashi area for 11 straight months. The restaurants were also featured in the food magazine Adult's Weekend as trailblazing new landmark restaurants for this era. He then went on in March 2026 to open Yui, a five seat limited restaurant in Shimonoseki, inspired by the region's ingredients. Inheriting the elegance and traditions of Edomae cuisine cultivated in Ginza and Nihonbashi, he welcomes guests with great care and offers Shimonoseki's finest treasures.
