A new generation of sushi chef who captivates diners with a Western culinary sensibility.
With 11 years of culinary experience, Mr. Okabe began his career at a Michelin-starred French restaurant in Kagurazaka and went on to gain experience in Italian cuisine, honing his Western culinary techniques and sensibilities. Later, drawn to the world of sushi, he turned to Japanese cuisine. He honed his skills under Executive Chef Mr. Onami at FUJIYAMA TOKYO and currently serves as head chef at the Shinjuku Higashiguchi Branch. Drawing on his background in French and Italian cuisine, he pursues a "sushi experience that moves you visually and leaves a lasting impression on your palate." His guiding principle is "the ultimate piece of sushi." He pours his heart into every piece, continuing to share Japanese sushi culture with the world.
