A chef who pursues new dishes using French culinary techniques and ingredients from the Tokai region.
Born in Hokkaido in 1984, he graduated from a vocational school in Osaka and then studied at Château Escoffier in Lyon, France, honing his skills in French cuisine. After gaining experience at Michelin-starred restaurants such as Restaurant Côte Saint-Jacques, he opened Bistro DIA in Shinsakae. Since then, he has worked in various types of restaurants, utilizing the experience he has cultivated in diverse genres to create dishes that delight his guests. He is a chef who transforms meals into memorable experiences by creating dishes that reflect the local culture and traditions.
