- Chef Yuzawa uses Japanese-style materials such as winter mochi, hamo, matsutake mushroom, tree shoots and flower-suzukisu. However, it is an authentic French cuisine when you eat it. Every dish has a "layer" of taste and it's solid but it doesn't shake that it's on the base. The season seems to deepen as the course goes on, and the Japanese food with a sense of season has a wonderful composition. Desseres are Branmanje and ice of Houji tea. I was surprised by the wasabi and the salt of Guerando, France, the ice of green asparagus and the ice of grilled eggplant. For me there are so many elements of love like love!
