Every day we head out to the Tsukiji fish market to inspect the catch. The rich flesh of the conger eel can be prepared in many ways, but we grill it simply, with salt. The soft and tender flesh holds together well, allowing you to make the most of the exquisite flavor. Every year, when the new buckwheat is harvested, we vacuum pack it for storage to ensure maximum freshness. We do this to ensure that you always get the buckwheat at its freshest.
