A Japanese and Western fusion dish. The dab fish slices are dressed with herbal sauce, while the ark shell and akashi octopus sashimi slices are served in basil-based vinegar miso sauce. The slightly grilled greenling is served with plum pulp sauce that goes well with champagne.
