Katsuo Shio tataki (Salted Seared Bonito) The final cooking is done right before your eyes. Fresh bonito, straight from Kochi, with a faint scent of straw that stimulates the appetite

This dish uses fresh bonito, caught and delivered by air from Kochi every day. The salt, artisan-made exclusively for the restaurant, and the appetite-whetting straw aroma work to great effect. The thickly sliced fish brings a sense of heartiness. Seasoned with garlic, wasabi, and salt.

Exquisite sweetness and aroma, cooked for luxuriant fluffiness in a Nambu iron pot: "Kagoshima's Akihonami Rice, cooked in a hagama (iron pot)"

The finishing touch on the meal is local, Kagoshima Prefecture-grown "Akihonami" rice, which is produced in limited quantities and not available to the general public. It has a distinctive flavor and aroma. This rice pairs wonderfully with a variety of "partners," which rotate on a monthly basis and can include tsukemono (Japanese pickled vegetables) and nitsuke (fish and/or vegetables boiled in soy sauce).

A "hassun" is a plate often used for serving small quantities of various items as appetizers, to be enjoyed with drinks. The hassun plates at Ryowa Daido feature the freshest vegetables throughout the year, providing a sense of the season, and are always bursting with color. Arranged on custom-made faceted plates, this dish has a stunning presentation.
