Same as for meat, fresh vegetables are purchased directly from contracted farmers as well as from the market. As the vegetables, such as onions from Awaji Island and shiitake mushrooms from Sanda, are slowly cooked on the teppan to extract their flavor, they are not seasoned too strongly, making them healthy and popular among women.

The fatty duck thighs are carefully grilled on the teppan, making the skin crispy and the meat juicy, plump, and tender. The moderate saltiness allows you to taste the flavor of the ingredient directly.
