They aim to use high-quality Japanese ingredients to create regional Italian cuisine, starting with their signature [Acqua Pazza].
This restaurant opened in April 2018 after relocating to Minami Aoyama. Back when people didn't fully understand the charms of Italian cuisine, Hidaka opened Acqua Pazza, making it the pioneer for introducing the deliciousness of the cuisine to Japan. All the ingredients were selected and procured from local Japanese producers by Hidaka himself, following the Italian culture of caring for each component. In particular, he talks with fish dealers on a daily basis to check on what fish he can procure at any given time. Anyone eating their signature [Acqua Pazza] will be satisfied with the deliciousness and quality of the ingredients! The taste of the fish is the star of the dish thanks to its simple preparation. It'll make you feel like you've been transported to a port town in South Italy!
