Tamura Beef, with its Tajima lineage, is raised amidst the natural bounty of the Tajima Mountain range in Hyogo Prefecture. In addition, the restaurant offers carefully selected horumon (offal meat) from "Omi Beef", one of Japan's three major beef breeds, and "Shiretoko Beef" grown in Okhotsk, Hokkaido, directly from the production area through its own channels. Utilizing the finest ingredients and seasonings, including offal sourced directly from wholesalers in various regions, un-vacuumed horumon, and anhydrous harami (skirt), dishes are prepared using various cooking methods, such as fermented aging.
