From the chef
Mr. Okumura's dream, since childhood, to learn the art of cooking and own his own restaurant has come true.

He was born in 1969 in Shiga. As a child, he was inspired to become a chef by the owner of a sushi restaurant that his family frequently visited. He studied cooking in high school and at a culinary school before joining the Miyako Hotel in April 1989 as a pastry chef apprentice. Four years later, he transferred to the dining restaurant, where he trained as a chef for 15 years. Subsequently, he worked as a chef at a hotel restaurant in Kyoto and at renowned restaurants before going independent in July 2011, when he opened Restaurant Shin. In December 2019, he opened his second restaurant, Tominokoji Shin, and is expanding his activities.
