Nihonbashi Kayabacho still has the atmosphere of Japan's Edo era. Fujiro, with its beautiful Japanese style of total hinoki cypress constructed by shrine carpenters, is a restaurant complex attracting people from Japan and abroad as a "pavilion of Japanese cuisine" since 2017. It has a yakitori restaurant on the first floor, a Japanese restaurant on the second floor, a sushi restaurant on the third floor, and a bar on the fourth floor, allowing you to enjoy various delicacies. Sushi Fujiro on the third floor is a hideaway loved by gourmets from the world of food. Under the themes of fusion of freshness and aging, Eastern and Western styles, it explores the techniques of freshness, ripeness, and fermentation to offer three unique "New Edomae Sushi" courses. The highly fresh Hakatamae sushi, the aged sushi with its amazing flavors, and the side dishes for alcohol are all served with exquisite intensity and speed, and both the flavors and design are quite dramatic! The restaurant usually operates on a membership system, but reservations for a limited number of seats are now available through SAVOR JAPAN.
