From the chef
Mr. Tsubota developed his skills at a renowned Japanese restaurant and now runs his own kappou restaurant.

He was born in 1963 in Hyogo. After graduating from junior high school, he began his culinary training at a hotel in Senri. When the hotel's head chef opened a new restaurant, Kagaman in Kitashinchi, he joined the opening team. After obtaining his cooking license, he gained experience at various Japanese and kappo restaurants through assignments from the national chef association. One of the places he trained at during his early career was Kappou Mutsugorou. In 1989, he became independent and took over the restaurant at the age of 25 when the elderly proprietress requested him to continue the name and legacy.
