This is a creative dish combining "Magret de Canard," a duck raised specifically for foie gras, with the milt of pufferfish, a specialty of Shimonoseki. The rich, creamy texture of the milt and the savory flavor of the duck meat are in perfect harmony. This specialty dish was inspired by foie gras en più.

A masterpiece where the rich aroma of miso and the powerful flavor of charcoal grilling come together in "Wagyu beef flank confit marinated in miso and grilled over charcoal."

This dish features the rare cut of Wagyu beef, the "kainomi," marinated not in oil, but in local Shimonoseki miso. The rich aroma of the miso infuses the beef with its umami flavor, and it's then finished off by being grilled over charcoal.
