The chef's expertise is clearly displayed in how he utilizes cutting techniques to influence texture. The yakiniku (Japanese BBQ) dipping sauce is a secret recipe handed down from the chef's grandmother. The intense sweetness of the dressing combines nicely with the meat. The kimchi (fermented vegetables) made by his mother is made from ordinary ingredients but has an exquisite spiciness which is delicious.
