The raw pig innards are stewed only in the liquid present in the innards themselves. The Japanese-style stock made from natural ingredients possesses a garlicky fragrance. The secret of this dish's deliciousness is the way in which it is lavishly prepared in a large pot. The water used in the food, tea, and even the whiskey, is the legendary spring water known as 'kouboushimizu'. It is from one of the group of springs in the Hadano mountain basin, where the subterranean streams of the Tanzawa mountain range gather. It is recognized as one of the 100 best natural waters of Japan. This restaurant started when the owner invited a group of neighbors around and treated them to 'Iemeshi' (homemade food). Even now, the owners think of the restaurant as an extension of that time, and strive to preserve an 'at home' atmosphere free from formality or stiffness. Please drop in and pay a visit!
