Acquiring the fundamentals at a famous Osaka restaurant, then aiming for independence in his wife's hometown of Kyoto.
Born in 1975 in Fukuoka, he was enthralled by the culinary world, and went on to Tsujigakuen Japanese Culinary College after graduating from high school. Building up experience at famed Osaka restaurants like Kisetsu Ryori Tsumura, he decided to start independently at 34. While searching Kyoto, the home of his wife's family, for a location, he came across an old private home, and it was there that he opened Gion Owatari. In 2012, he earned a Michelin star.

- A French restaurant 【Gion MAVO】 which is quietly located 10 minutes on foot from Keihan Main Line Gion Shijo Station where tea pairing is famous. It seems that you add berry essence to hojicha and taste like a cocktail, and you can enjoy it even if you can not drink alcohol. I often use for lunch, but I am always impressed with delicate and colorful dishes and pairing tea.

- The shop has a sophisticated and stylish atmosphere, with a sense of obsession with the furniture and interiors. Simplely prepared dishes are flavors that make the best use of the ingredients themselves. For example, freshly cooked mozzarella in an appetizer is simple, but it has a taste of cheese that sets it apart from the mozzarella we have eaten so far.

- I'm always impressed with the unique sensibility of the owner, Mr. Furuta. Mr. Furuta's meticulous attention is paid to all the dishes that look simple, and it takes time and effort to study. It was very impressive to let the elaborate dishes come out lightly.
